Fried aubergines in lemon & garlic dressing. There are no exact measurements, just adapt it to your own palate. They are deliciously piquant and go well with meat, fish, cheese, houmous, a nice addition to sandwiches also.
- 2 -3 aubergines
- 1⁄4 cup lemon juice
- 6 garlic cloves, crushed
- 1⁄2 teaspoon sweet paprika
- 3⁄4 teaspoon cumin
- 1⁄2 teaspoon salt

- Wash the aubergines and cut off the stalks. Slice into circles approx half a centimetre thick. Fry until golden brown and lay on a double sheet of kitchen paper on top of some old newspaper (soaks up the superfluous oil very well) and leave to cool.
- In a jar, shake up about 1/8 cup oil & 1/4 cup lemon juice, a few cloves of crushed garlic, about 3/4 teaspoon of cumin, 1/2 teaspoon of sweet paprice and a dash of salt.
- Put the cooled fried aubergines in a container and pour the dressing over them.
