Minty Carob Shake (Raw Vegan)

"(LFRV compliant!) Oh my!!! I have had this two days in a row and I don't think I see an end in sight - sooooo delicious!! This is so creamy, rich, and so much better than any mint chocolate ice cream I have had (mainly because I can have so much without feeling awful afterwards!!). I use lady finger bananas which are much smaller than normal bananas...I'm not exactly sure how many this would be equal to so I had to use cups...sorry if that causes any difficulties. You may add more mint or carob depending on your tastes - this was just enough to get the flavors for me without wasting. Also I put this down for 2 servings but I drink the whole thing and feel amazingly energized but I guess you could share if you like :)"

  • First blend the dates and water (once you put frozen bananas in those dates get really cold & hard to blend so work them out first).
  • Add the rest of the ingredients and blend up. You may need to add more water to get things moving, thats fine it won't take away any flavor. Garnish with a mint leaf if you like but mine is usually gone before I would even have time for this. Enjoy!

  1. Just be sure to follow direction to soak dates first, whether in water or other liquid. Then you're in for a real doozy of a smoothie. Mmmmmmmmm.... *dreamy lip-licking*

I was afraid that the flavors of the dates and bananas would be overpowering, but they really complemented the carob powder, giving it a rich, chocolaty flavor. I have to admit that I used soy milk instead of water, which isn't raw, but made it even "creamier." I found that one large banana was enough. I will definitely make this again. Made (belatedly) for Veg*an Swap, July 2010
     
  3. Yum yum, this is lovely. I cheated and used dibis (date syrup) because I wanted it right away! But I will definitely make this again as posted. I used fresh mint from the garden.
