Minted Cucumber Nojitos

This recipe comes from a Grilling magazine. They are non-alcoholic mojitos. My DD wants to have them for her graduation party so I am putting it here so I can fidget with servings. We haven't tried it yet. The Simple Syrup recipe is in the body of the drink recipe.

  1. In a large pitcher combine lemon and lime juice.
  2. Add mint leaves and Simple Syrup.
  3. Using a muddler or the back of a spoon crush leaves and stir together well.
  4. Add cucumber slices and ice cubes.
  5. Pout lemonade and club soda into pitches.
  6. Serve immediately.
  8. 1 cup water.
  9. 1 cup sugar.
  10. In a small saucepan combine water and sugar.
  11. Bring to a boil over medium heat, stirring until sugar dissolves.
  12. Cook until the mixture is completely clear and the surface is covered with bubbles.
  13. Remove from heat.
  14. Allow to cool.
  15. Transfer to a container.
  16. Store, tightly covered, in the refrigerator for up to 2 weeks.
