You'll want to have these again and again and again. They are REALLY beautiful - and so tender and succulent. Very easy and quick to prepare too - and can be prepared a day ahead!

Really really great marinade for Lamb. The flavor is perfect and compliments the lamb in just the right way. I messed up by melting the honey as it wasn't pouring honey, so I never got that "glaze", but it didn't matter. I also just baked the lamb chops in the oven for 25 minutes at about 210c and they were yummy. I'll be using this over and over again!
- 6 lamb chops (choose nice meaty ones)
- 1⁄2 cup lemon juice
- 1⁄2 cup red wine
- 1⁄3 cup of fresh mint, chopped
- 2 -3 cloves garlic, crushed
- 1⁄4 cup honey
