Herbal vinegars make good marinades. Also try this with oil as a different flavored salad dressing. This also makes a pretty gift.

I made this according to the directions and waited about 2-1/2 weeks before I strained it. My vinegar came out a very weak green color which does not make it pretty to look at in a clear bottle. However the taste and smell are heavenly. I made a Roma tomato with feta salad with it for dinner this evening. I am going to share this with my mother and see what she thinks of it.
