It takes roughly 1 3/4 - 2 ounces of mint leaves to make 2 cups. My son suggested freezing the leaves inside a syrup cube. I'm increasing my mint crop this year to give it a shot. Do yourself a favor and chew a few drained leaves. Yummy.

  1. Boil the sugar and water until dissovled.
  2. Add honey.
  3. Stir in mint and bring to a boil.
  4. Let steep until it turns green, about 1/2 hour.
  5. Pour through a sieve.
  6. Keep in refrigerator.
