    My mon makes these every year for the holidays. The meringue can be pokey, but they are really delicious.

    Ingredients:

    • 2 egg whites
    • 3/4 cup sugar
    • salt
    • 1/2 teaspoon vanilla
    • green food coloring
    • 1 (6 ounce) package mint chocolate chips

    Directions:

    1. 1
      Preheat oven to 350.
    2. 2
      Beat egg whites until stiff (this takes a while - at least 20 min.). Add sugar GRADUALLY and beat. Add vanilla and several drops of food coloring. Fold in chocolate chips. Drop on very greased cookie sheet, and place in oven. Turn oven off. Leave overnight, or for at least 5 hours. Take out and enjoy!

      These are fantastic! I made a double batch with no vanilla or food colouring but added a little cream of tartar. I could have eaten all 28 of them myself but somehow managed to restrain myself and keep them for my Christmas party tomorrow night! I only left them in the oven for 2 hours but they turned out just perfectly for my liking... still chewy on the inside. Lovely! Can't wait to whip up another batch! Thanks so much!

      I actually used a slightly different recipe to make th e meringues, but since I got the idea of using mint chocolate chips from this one, I wanted to give you credit, too ... they're delicious! But here's a hint: If you use 1/4 tsp. cream of tartar when you beat your egg whites, it won't be nearly as much work -- mine were stiff in about 3 minutes, and adding the sugar (1 Tbsp. at a time) took no more than another five minutes. The mint chips really make the meringues a delight. Thanks for posting!
