These cookies have a really nice flavor. The mint gives it just the kick these cookies need.
- 1 cup softened butter
- 1 cup brown sugar
- 1⁄2 cup sugar
- 2 teaspoons vanilla
- 2 eggs
- 2 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 (225 g) package mint chocolate chips
- Preheat oven to 375.
- Beat butter, sugar, vanilla, and eggs until fluffy. Mix in flour, baking soda & salt. Stir in chips.
- Drop heaping tsp in ungreased pan about 2 inches apart.
- Bake 10-12 minutes or until lightly browned.
These are very delicious, but spread out quite thin while cooking. The kids didn't care that they looked funny (chips melted holes into cookies & they all ran together). They ate them all up within 24 hrs. Next time I'll try using 1/2 shortening and 1/2 butter.
