Mini Orange Poppy Seed Pancakes

  • Sift flour into a medium bowl and stir in sugar and poppy seeds and then make a well at the centre.
  • Whisk in milk, egg yolk, butter and zest in a medium jug and then pour into flour mix and whisk until mix is just combined.
  • Heat a large non-stick frying pan over moderately low heat and brush with a little extra butter to grease and wipe excess with a paper towel.
  • For each pancake, spoon 1 tablespoon of batter into pan and cook for 1 to 1 1/2 minutes or until golden and cooked and transfer to a heatproof plate, cover with foil to keep warm.
  • Using an electric mixer, beat ricotta, honey and cream in a small bowl until creamy.
  • Serve pancake topped with ricotta cream and orange segments and drizzle with extra honey.

  1. Thanks for sharing your lovely recipe Pat. It's a unique pancake, I really enjoyed the flavor and the textures. The pancakes are tender and flavorful, topped with a nice ricotta cream, oranges and liquid honey. A beautiful blending of flavors.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
