The recipe is kind of bland. FAR too many bread crumbs for this amount (I knew it when I poured them and left them in any way). The meatloaves came out very bready. The bacon flavor didn't permeate them, either. I think it would be better to just cut up cooked bacon and put it inside the meatloaves. Not a bad base, but needs improvement and some skill in seasoning.
Made these tonight with lean beef (93%lean) and they came out amazing! I used regular strip bacon which I under cooked and finished cooking under broiler. Also substituted garlic tomato sauce instead of ketchup. Will be a family favorite.
This didn't work for me. The muffin tins were filled with a lot of grease, so the bottom of the bacon didn't crisp. The grease also overflowed into the oven and started to smoke. The meatloaves themselves weren't all that great for my taste depsite a presence of bacon that usually makes everything good.
These were not quite as good as I thought they would be.There wasn't much flavour to the meatloaf,next time I would add italian seasoning and perhaps some chili powder.Since the bacon was wrapped around the meat,the bacon underneath was very soggy and undercooked.I think it would be better to just use a small piece of bacon and lay it on top since that's the only part that crisps up.Also,the cooking time was longer than 12 minutes for mine.It took more like 20-25 minutes.
HOW excellent this is, TRUE! Made two batches, one with egg, one without too! Used streaky bacon, was PERFECT size! This comfort food really takes you by surprise! THANK YOU! THANK YOU! THANK YOU!! for today! This definately MADE MY DAY! WHOO HOO!
