Mini Fruitcakes

"Here is another great recipe for the Holidays - it's not a hard recipe to make and it tastes delicious."

• Ingredients: 8
• Yields: 36 cupcakes

ingredients

• 3 eggs, well beaten
• 1 (14 ounce) can sweetened condensed milk
• 1 (28 ounce) jar mincemeat
• 1 cup nuts, chopped
• 2 cups corn flakes, crumbs
• 1⁄2 cup all-purpose flour
• 1 teaspoon baking soda
• 36 candied cherries

directions

1. In large bowl, combine all ingredients except cherries. Line cupcake pans with paper liners or use triple thick paper liners on cookie sheets. Spoon a level measuring tablespoon of batter into each liner. Top each with a cherry half.
2. Bake in a 300F oven for 25-30 minutes. Cool.
