These are great for individual desserts. very god with seasonal berries. I drizzled a little blackcap (blackberry) syrup over the top to add a little more color. cooking time includes cooling time
- 2 (453.59 g) package cream cheese, softened
- 2 eggs
- 177.44 ml sugar
- 14.79 ml vanilla
- fresh fruit, to top
- berry syrup (optional)
- 236.59 ml graham cracker, crushed
- 59.14 ml butter, melted
- 78.07 ml sugar
- mix cream cheese, eggs, sugar and vanilla until well blended.
- In a separate bowl, mix graham crackers, butter and sugar.
- press crumbly graham cracker mix into liners in muffin tin.
- Pour filling mixture over crust, about 3/4 of the way up.
- bake 15 minutes at 375.
- remove and cool.
- put your favorite fruit and syrup, if you wish on top.
- Chill until serving.
Simple, quick and very yummy! I added a few white chocolate chips on top, they added a little extra sweetness and complimented the fruit quite well.
These are very easy and delicious. They are so cute. I will use this recipe for my little cheesecakes from now on.
These mini Cheesecakes were awesome. My family loved them and they made a small and easy dessert that was simple to serve to guests.
