Super good! I added chopped turkey pepperoni on top of the cheese and sprinkled with Penzy's pasta sprinkle and crushed red pepper. We'll be making these again. Thanks for sharing the recipe.
Excellent!! I used pepparoni, mushrooms in addition to the cheese. I often make homemade pizza for the family....this way, I can eat pizza too, without all the carbs.

I didn't peel the eggplant because I wanted the color and texture. On half the slices I used prepared pesto and half I used the pasta sauce. Delicious! These are like "de-constructed" eggplant parmesean. If you don't have the time to make eggplant parmesean, these are a great "cheat." Rachel Ray would be proud!
