  1. Line muffins with foil liners. Place one vanilla wafer in liner.
  2. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs. Mix well.
  3. Pour over wafers, filling 3/4 full.
  4. Bake at 325 for 25 minutes. Remove from pan when cool. Chill.
  5. Top with fruit and nuts.

These are so delicious and very easy. I made these to take to a BBQ-Cookout. A big hit. I used blueberry pie filling but any would be good. This is great for entertaining. Thanks so much.

Delicious!! I used cherry pie filling to top off my individual cheesecakes - wonderful!! I also made them in coloured muffin cups - really added to the asthetics of it. Next time I'm going to try some blueberry topping - excellent recipe - very good and very easy. Thanks for posting!

I made these years ago and had lost the recipe. Made them again this weekend and they were a big hit! I didn't use foil liners and made them the day before so they would be nice and cold. Thanks for posting!
