Mini Cheesecakes (1974)

"An old recipe from my hometown (Lawrence, MA) newspaper."

• Yields: 12 cakes
• Serves: 12

ingredients

• 1 egg
• 8 ounces cream cheese (room temp.)
• 1⁄2 cup sugar
• 1 tablespoon vanilla
• 12 vanilla wafer cookies

directions

1. Mix all ingredients together.
2. Put a vanilla cookie into foil cupcake tin.
3. Fill with mixture 3/4 full.
4. Bake at 375 for 10-12 minutes.
5. Cool (centers will dimple).
6. Top with cherry or blueberry pie filling.
7. You can vary the cookie too (Oreo, chocolate chip).
