Minestrone Hamburger Soup

"This is my Mother's recipe. It has lots of memories for me. I will often double this recipe and cook in the crock pot. Very easy and hearty soup that's even better on the second day!"

  • Brown ground chuck with chopped onions. Drain well.
  • Place all ingredients in stock or crock pot (including raw macaroni) and cook over low heat for 1-1/2 to 2 hours; stirring often.
  • Can place in crock pot over low heat 5-6 hours or until vegetables are tender.
  • *If you prefer your pasta al dente, then cook pasta separately and add to soup just before serving or add towards the end and cook until it is done to your preference. You can also use rice instead of macaroni.

  1. I did not do the crock pot version. I just did everything on the stove I adding in more water to make more and lower the calorie count! Family of 5, 3 cups = 300 calories! Thank you CindiJ for SHARING!!!
     
  2. Very good soup but if cooked in a crockpot for a long time (all day) the macaroni disintegrates -- next time I will cook the delicious soup as directed but will add the macaroni at the end and then cook the soup with the macaroni for another 15 minutes or so. Thanks for sharing!
