Mincemeat Muffins

"Dad loves mincemeat. Thinking about trying these during the holidays--just for him."

• Yields: 12 -24 muffins

ingredients

• 3⁄4 cup oil
• 1 cup sugar
• 2 eggs, beaten
• 2 cups all-purpose flour
• 1 cup milk
• 1 cup all-bran cereal
• 2 teaspoons baking powder
• 1 teaspoon salt
• 1 teaspoon baking soda
• 1 cup mincemeat

directions

1. Preheat oven to 350° and grease muffin pan.
2. In a mixing bowl, combine all the ingredients; mix well.
3. Spoon batter into prepared muffin tin, filling to the top.
4. Bake for 20-25 minutes.

These muffins were very light and moist. Used "green tomato mincemeat" that I made last summer. I will make again.
