    I created this recipe for the Bake-a-thon in honor of CoolMonday who recently lost her battle with cancer. I did not know her or her husband but I was touched this morning when I read of them and the Bake-a-thon hosted by ChefFiFi. These bars are a great holday dessert, but could be enjoyed any time of the year. I have to confess, I love mincemeat but I am not a pie crust maker so I created these for the mincemeat taste but SO easy! My <3 goes out to CoolMonday's family.

    Ingredients:

    • 517.37 g box yellow cake mix
    • 236.59 ml oatmeal
    • 59.14 ml butter, melted
    • 765.43 g jar mincemeat

    Directions:

      Preheat oven to 400.
    2. 2
      Grease or spray 13 x 9 pan.
    3. 3
      Combine cake mix, oatmeal and melted butter in mixing bowl.
    4. 4
      Reserving 1 cup of mixture, spread remaining mix into prepared pan, gently pressing to form bottom "crust".
    5. 5
      Spread prepared mincemeat over crust.
    6. 6
      Sprinkle mincemeat with remaining cake mix mixture.

      Bake for 30 minutes or until golden brown.

      Allow to cool before cutting into bars.

      These could be made in a tart pan with a removable bottom and cut into thin wedges.

      Although these were very easy to make, I didn't care for how the top crust turned out. The top crust was very powdery and tasted just like you were eating dry cake mix. The bottom crust turned out OK. This recipe was just so so for me. I will eat them, but I probably will not make them again. I followed the recipes exactly as written.

      When making this, I thought the 1/4 cup butter was going to far too little moisture for the entire cake mix and oats. But suprisingly it baked up nicely! Great flavor, although I think the taste of the cake mix takes a little away from the mincemeat. Guess I just like mincemeat that much! Still tastes great and I'll be making this again.

      Oh Wow! If you like mincemeat then try this! If you don't, like my daughter, try it anyway and you may be as surprised as she was. Made this for a last minute get-together on New Year's Eve and it turned out just like the pictures and tasted better. The cake mix crust was the key, it's just yummy. (**I only had the dry mincemeat that must be reconstituted, used two pkgs. but only 3 cups water, plus added a grated apple and orange rind and cooked til really thick. I had about a cup too much for the recipe.) Thanks for a new holiday regular, this will replace my usual pie.
