- 1 medium onion, diced
- 500 g minced beef
- 2 tablespoons curry powder
- 1 cup fruit chutney
- 1 cup water
- 2 cups frozen vegetables (your choice)
- oil
directions
- Heat oil in saucepan.
- Add onion and beef.
- Cook until beef has browned.
- Add all other ingredients and stir thoroughly.
- Simmer for about 10 minutes.
- Serve.

I thought this was delicious! I did make a few changes - I only used 1 spoon of curry, as that's more to our taste. I used a spiced fruit chutney and instead of frozen vegetables used fresh spring onions and garlic. I will serve with lady fingers (ocra) and baked potato. Totally delicious. The most successful mince I've ever made and will definitely make it again.

Personally I found this dish quite bland. I tend to have trouble with hot or spicy foods so I thought this dish would be perfect for the family and myself. But to be honest it didn’t tickle any taste buds like any other curry I had tired have, so unfortunately we won’t be using this recipe again. I agree it was fairly easily to make and you weren’t slaving away over a stove, but as I said before the taste was bland, plus it didn’t look as advertising as one had hoped.
