These are a great muffin. I love muffins anyway and there is so much stuff in these. It might take a couple of minutes to shred the "whatever" but it is worth it. Yummy!

  1. In a large bowl combine and mix well the first 7 ingredients.
  2. Gently stir into the dry ingredients the apples, carrots, coconut, raisins, and walnuts.
  3. In a medium bowl combine and mix well the eggs, oil, milk, and vanilla.
  4. Gently stir into the rest of the batter stirring in one direction only.
  5. Fill paper line muffin tins 3/4 full.
  6. Bake 350 degrees for 20-25 minute.
  7. Remove and serve warm.
