It's dark, moist and delicious. And it comes in a bread basket to your table at this French themed west coast casual restaurant. Now the tastiest carrot bread ever can be yours to create at home with a couple of grated carrots, molasses, raisins and chopped walnuts. You'll be baking this one in the oven for at least an hour. That should be enough time to warm up the house and send amazing smells wafting through every room. Line the carpet with newspaper to catch the family drool.

This bread is absolutely delicious and very healthy. It taste just like Mimi's Cafe. I had read that many had problems with the center falling. I made 4 loaves instead on 2 in the mini loaf pans and had no problem. Many had problems with the bread sticking to the pans. I took them out immediately while still hot and had no problem, yet did have to stick a knife on the side and wedge them out a bit. Who cares though, this bread is well worth it and everyone I serve it to, LOVES IT.

I made this bread to go with Thanksgiving supper and it was indeed just like what they serve at Mimi's Cafe. Its is delicious!! I put the whole batch in a bunt pan and did not grease & flour the pan - that was a mistake because it was really suck in there. Next time I will grease & flour my pan and only bake it for 50 minutes if I'm using a bunt pan.
