"My husband loves Mimi's Cafe's Barbecue Chicken Salad. We don't live near a Mimi's anymore so I improvised this and now enjoy the rave reviews Mimi's once received. I won't say this is an exact copycat, just my version."

ingredients

• 283.49 g lettuce
• 2 chicken breasts
• 177.44 ml corn, chilled
• 2 green onions, chopped
• 1 stalk celery, chopped
• 118.29 ml cheddar cheese, shredded
• 59.14 ml ranch dressing
• 29.57 ml barbecue sauce
• corn tortilla strips

directions

1. Grill chicken breasts. Cut into cube-size pieces.
2. Add remaining ingredients except barbecue sauce. toss well.
3. Drizzle with barbecue sauce.
