"I tweaked another recipe I found on the site to make it "healthier". I'm always looking for a quick breakfast/snack muffin."

  • Combine milk and lemon juice. Let sit for at least five minutes.
  • In a small bowl combine the dry ingredients.
  • In a large bowl combine brown sugar, apple sauce, egg and vanilla.
  • Alternately add the milk mixture and the dry ingredients mixing well.
  • Stir in the apples.
  • Fill greased or lined muffin tins 2/3 full. Bake in a 350 oven for 20-30 minutes or until toothpick inserted comes clean.

  1. These were OK; a little bland for our taste, but they would be a great breakfast muffin with a cup of coffee or tea.
