This is a light and fluffy, healthier pancake. The recipe comes from "The Millers Family" book series that our family has used for devotions.
- 3 eggs
- 3 cups milk
- 2 -4 tablespoons oil
- 3 cups whole wheat flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- Beat eggs, milk and oil lightly Blend together dry ingredients- add to wet mixture.
- Mix together until just moistened cook over medium heat in greased skillet/griddle.
These are pretty dense, but that is expected with whole wheat flour. My batter was easily poured though, and did "bubble" and cook as usual. The flavor was great, and I appreciate that there is no added sugar or white flour. This will be one of my regular breakfasts from now on.
I'm not sure that I would call these pancakes light and fluffy. They're very dense because of the wheat flour (and I used whole wheat pastry flour)but they are made a little lighter because of the baking powder. I found that I needed to scoop the batter onto the griddle because the batter was too thick to pour. I was a litle skeptical because of how they looked while cooking (mine did not bubble up when they were ready to be flipped), but they tasted very good. If you like a wholesome, filling pancake, this is a good recipe for you.
