- 1 cup mozzarella cheese, grated
- 1 cup parmesan cheese, freshly grated
- 1 cup mayonnaise
- pepper
- 1 (15 ounce) can artichokes (drained and cut up)
- 2 garlic, minced
- 4 ounces cream cheese
- 0.5 (10 ounce) box frozen chopped spinach, thawed and drained
directions
- Combine mozzarella cheese, parmesan cheese, mayonnaise, pepper, artichoke, garlic, cream cheese and thawed spinach in a oven proof dish.
- Bake in 325 oven for 20 minutes.

I've made a few variations of a hot spinach artichoke dip & this is the best thus far :). I made couple tweaks - used herb & garlic cream cheese (vs plain), used an italian cheese mix I had on hand (instead of the mozzarella + parmesan), used a little more cheese & a little more mayo than called for in the recipe. And I baked it for longer (~30 mins) & higher temperature (~400).
