Mile High Raspberry Pie

"from Southern Sideboards. Delicious, light, refreshing pie! Great raspberry flavor. Cooking time is freezing time, approximately. Use fresh raspberries when possible but if using frozen, make sure they are thawed. Very easy, great, pretty result!"

  • 1 pie crust, unbaked
  • 12 cup sliced almonds
  • 1 cup whipping cream, whipped
  • 10 ounces raspberries
  • 1 tablespoon lemon juice
  • 1 teaspoon almond extract
  • 3 egg whites
  • 1 cup sugar

  • Preheat oven to 350 degrees Fahrenheit.
  • Unroll pie crust into pie tin.
  • Press almonds into crust.
  • Bake crust 10-12 minutes, or until golden. Let cool.
  • Whip the cream, set aside or let chill in fridge.
  • Mix egg whites, raspberries, lemon juice, almond extract, and sugar in mixer until stiff.
  • Fold whipped cream into fluffy, pink, raspberry mixture.
  • Pour into cool pie crust.
  • Freeze at least 4 hours, on until serving.

I'm a Jackson native, love it to death! I love fresh foods, and grew up loving fresh fruit and veggies. I still do! Whenever I cook, I try to not make it too unhealthy but still taste great. I love cooking, and working out, and making all sorts of stuff, and throwing parties! My family is quite supportive of my cooking and always tries, and says they enjoy, my dishes. I love cooking desserts, especially freezing ice creams. I made up an apple pie/crisp recipe and that's been a hit in the fall. I really like fruit, frozen yogurt, veggies, recently tofu, fish, pork, chicken, most everything.
