Mika's No Tomato Chili

"This is awesome over rice with toppings like cheese, sour cream and green onions. It is a big favorite with my family. Sometimes I double the recipe for leftovers so we can have some over nacho chips or baked potatoes the next night. I also add pinto beans and serve this over Indian fry bread for Indian Tacos."

  • In a large dutch oven combine first 3 ingredients and cook over medium heat until meat looks done.
  • Add the rest of the ingredients and cook over low heat covered for an hour.
  • Serve over white rice.
  • Optional toppings -- shredded cheese, sour cream, green onions.

  1. DH hates tomatoes/beans in his chili, so I'm the search for the perfect chili recipe for him. :) We liked this a lot! I cut the recipe in half for the two of us. We aren't big beer drinkers so I think next time I will leave that out - as we didn't really care for the taste it brought out - but we solved it by adding some smoked chipotle Tabasco sauce, some worsch. sauce, and a tbsp of cornmeal to thicken it. All that did the trick. Topped mine with sour cream and cheese, DH topped his with just cheese! Yum!
     
  2. I've never written a review in my life, but after preparing this recipe for years, I felt I HAD to. I love this chili. Absolutely love it. I prepare as shown, and only sub out the flour for chickpea flour and the beer with stock/bone broth, kombucha or water. It is really just about the best combination of spices, and I wanted to post to thank you for sharing this.
     
  3. Great recipe! The kids love it becuase there is no chunky tomatoes or onions in it. Great flavor and I love cooking with beer. Just one question. How much paprika? It's the only ingredient not listed with a measurement. Thanks again for the recipe.

  1. We have wheat allergies, so I subbed out 1 TBS cornstarch for the flour, and eliminated the beer. To make up for the flavor of missing the beer, I used beef stock instead of water and added 2 TBS apple cider vinegar and 2 TBS worchestershire sauce....turned out delicious!
