This is a GREAT Tex-Mex meal..we often have for brunch. Serve with refried beans on the side. Also reheats well in the microwave.

  1. Beat Eggs in a bowl, set aside.
  2. In large non-stick frying pan, melt butter and saute bell peppers and green onions.
  3. While those are sautéing, add tortilla chips to beaten eggs.
  4. Add Rotel and green chillies.
  5. Simmer for 5 minutes.
  6. Add egg mixture and cook over med-low until eggs are almost set.
  7. Put on low, add cheese, cover until eggs are done and cheese is melted.

Absolutley the best Migas I've found. Had something similar in a Mexican restraunt. Will be making all the time! Thanks for sharing!

The recipe was good. I will probably make some changes next time though. I found the corn flavor of the tortillas seemed to overpower the dish so I will cut back to 1 cup instead of two.
