As the old commercial used to say "Indescribably Delicious" and not difficult to do. I did have a slight problem in spreading the top layer of chocolate so I settled for swirling it (which looked fantastic). The chill time really set's it and I wasn't able to cut the squares without shattering the top chocolate. Still not horrible and quite interesting looking really. I don't care how the top chocolate breaks, this recipe is amazing. The mint strength is just perfect, pleasantly present without being too strong. Made for Photo Tag.

Made this for family and coworkers - all were impressed. Very nice addition of flavor and color to a holiday goodie tray. Mint is so refreshing -and what can I say about chocolate ;) I'm thinking it would be nice in the spring or at a baby/bridal shower with a pastel color - yellow, pink or light blue... Thanks Boomette1!
