Midnight Cake

"Homemade deep, dark chocolate cake, mmm... is there anything like it? I can't resist chocolate cake and this is one of the best."

• Serves: 8

ingredients

• 1 cup butter or 1 cup margarine
• 2 1⁄2 cups sugar
• 4 eggs, separated
• 1 cup cocoa
• 2 cups boiling water
• 3 cups sifted flour
• 1 teaspoon salt
• 2 teaspoons baking soda
• 2 teaspoons baking powder
• 2 teaspoons vanilla

directions

1. Preheat oven to 350 degrees.
2. Cream butter and sugar.
3. Add eggs one at a time, first yolks then whites.
4. Mix cocoa with water.
5. Sift dry ingredients together.
6. Add flour mixture with cocoa mixture, stir in vanilla.
7. Bake at 350 degrees for 20- 30 minutes, makes three layers or 45 minutes for bundt cake.
