    Official Contest Entry: Simply Potatoes 5Fix. I love open faced Hot Roast beef sandwiches with mashed potatoes.This recipe gives you that with the Vegetables that we all need.Put together ingredients,& put in oven. (add more of each ingredient to your liking) Takes about 2 lbs. of Roast beef

    Ingredients:

    Serves: 6

    • 1 (22 ounce) can beef gravy
    • 1 (2 lb) package deli roast beef (sliced)
    • 1 (10 ounce) bag frozen vegetables
    • 1 (16 ounce) container Simply Potatoes Traditional Mashed Potatoes
    • 3 ounces grated parmesan cheese

    Directions:

    1. 1
      Heat oven to 350 degrees.

      Spray 13" by 9" pan or baking dish with Cooking Spray.
    3. 3
      Cook Simply Potatoes in Microwave as directed on package.
    4. 4
      Cook Frozen Vegetables in microwave at half of time on package.
    5. 5
      Cut Roast Beef into 1" squares.
    6. 6
      Mix Beef with Gravy,& season to your taste.(I like Montreal Steak Seasoning).

      Spread Roast beef mixture evenly in Baking dish or pan.

      Spread Vegetables evenly on Beef Mixture.

      Spread Simply Potatoes on Vegetables.

      Cover with Aluminum Foil.

      Bake in oven for 10 minutes.

      Remove foil.

      Sprinkle Cheese on potatoes (as much as you like).

      Bake uncovered for 5 minutes,(or until Cheese is melted,& starting to brow.

      Serve with Bicuits.
