Herbal vinegars make good marinades. Also try this with oil as a different flavored salad dressing. This also makes a pretty gift.
- 1 quart white wine vinegar
- 1⁄4 cup dried lemon peel
- 3 sprigs fresh oregano
- 2 sprigs of fresh mint
- 1 cinnamon stick
- cinnamon stick (optional)
- Pour vinegar over herbs. Cover tightly and steep 2-3 weeks.
- Strain into decorative bottle. Add a cinnamon stick for decoration.
Very nice flavour. I'm not 100% sure about the addition of the cinnamon and it came out surprisingly strong in my vinegar. I'll either use a smaller stick next time, or just leave it out completely. Used it in a caesar-style salad today and it was very nice.
