  • Gently fry the onions in butter or oil until softened, add the chopped fruits and cook gently, stirring, for 2-3 minutes.
  • Add salt, pepper and cinnamon.
  • Fill the chicken with mixture.
  • Truss and rub chicken with salt and pepper, pour a little melted butter over chicken.
  • Bake in a moderate oven, basting frequently with butter for 1& 1/2 hours or until chicken is tender.
  • Serve with rice.

  1. This sounded pretty good. I made it with canned apricots and chicken breasts sauted with the fruit and onion. I served it with basamati rice and a side of sumac. It was very good.
