Very good, although I did make some changes, due to what I had on hand. I used sliced scallion instead of sliced onion and proceeded to overcook it in the microwave. I should have reduced the time since the pieces were smaller, but they were still good. I then beat the eggs with heavy cream (I had no sour cream) and also added a 1/4 cup of shredded Colby Jack cheese. I then cooked this for 2 minutes, stirring every 30 seconds. I added the bacon once the eggs were cooked and did not put in the microwave again. I was afraid to overcook the bacon with the method suggested. Everything came out delicious, although I realized I probably could have scrambled the eggs just as quickly in a skillet! Made for Rookie Recipe Tag Game.
As I had my oven on I cooked my bacon in the oven and served whole on the plate but cooked the egg in the microwave as directed but did have to use cream as I was out of sour cream, great way to make eggs and I did enjoy the onion in the egg, thank you ellie_, made for Rookie tag game.
This was so good and quick. After cooking the onions I stirred in fat free sour cream (Sour cream and eggs! Something I would have never thought to do) And eggs right into the cooked onions and cooked for a 1 1/2 minutes. While cooking the onions I microwave 1 strip of bacon in a separate dish then added to the finished eggs.So bacon and eggs were done together. These were very light and fluffy. I did add salt and pepper after tasting and it was perfect!

Breakfast this a.m. was very good thanks to you. I used an egg substitute for the eggs and added some snipped green chives. The addition of the sour cream makes these eggs extra special and fluffy. I served this dish with sliced tomatoes and homemade biscuits. DH and I really enjoyed them. Thanks Ellie!
