This is just what a college girl needs--something quick easy and a little different from the blah-blah food I usually make. Plus--its super cheap!
- 2 large red potatoes or 3 medium potatoes
- 1 tablespoon lemon juice
- 1⁄2-1 tablespoon dried cilantro
- salt and pepper
- Cook potatos according to your microwave specifications. Let cool just so you can handle them and then cut into bit size pieces. Place in a container with a lid. Add lemon juice, cilantro, salt and pepper. Place lid on and give a good shake. Adjust spices to your liking. Enjoy!
These potatoes turned out really good! Not the prettiest recipe, but tasted great! Loved the lemon and added a bit more. I used a little less than a 1/2 T. of dried cilantro. It reminded me of tarragon. It's so great to find a potato recipe that doesn't call for any fat, although my DH did added butter to his serving. Thanks for posting the recipe. I'll be making this again.
