This is a good healthy snack. I got the recipe from Diabetic cooking magazine.
- Place sweet potatoes, in single layer, in microwavable dish.
- Sprinkle with water.
- Microwave at HIGH 5 minutes.
- Stir in brown sugar and margarine.
- Microwave at HIGH 2 to 3 minutes.
- Let stand a few minutes before serving.
Tastes good and very easy! I don't know how she got her potatoes to lay in a single layer, but it still worked all piled up. Was this supposed to be crispy like chips? In any case, very good. Used the large slicer side of my 4 sided cheese grater which made the slicing very easy. Added more brown sugar for my taste.
Being in college without a kitchen has its drawbacks...this was such a great micro recipe! I eat it allll the time...I just put sliced sweet potatoes and water in the microwave for 2 minutes, mix, then 2 more minutes...then add some salt and pepper and it's ready! Thanks for a college-friendly recipe!
