This is one of my favorite low-cal recipes to make on a weeknight. Probably not a true risotto but it is yummy.

  1. In a 2-quart microwave-safe casserole, combine onion and oil, microwave for 2 minutes.
  2. Add rice and microwave for 1 minute.
  3. Add broth microwave for 6 minutes.
  4. Stir in chopped celery, ground chicken, and spices. Microwave for 8 minutes or until chicken is no longer pink.
  5. Remove casserole from microwave and let stand covered for 10 minutes until liquid is absorbed. Test to make sure rice is cooked.
