Microwave Rice Pudding

"I LOVE rice pudding and this is one of my favorite! This is super easy and creamy. Guaranteed not to scorch or curdle! I always add some cinnamon and/or nutmeg or it's great without! Yummy warm or cold. I use leftover rice. This is one of my kids favorite desserts, will not disappoint <3!"

  • Make sure the rice is cooked ahead of time.
  • Whisk first 6 ingredients. And raisins if you want, we prefer without ;).
  • Put in microwave and cook 1 - 1 1/2 minutes.
  • Remove and whisk.
  • Put back in microwave for another 1 - 1 1/2 minutes.
  • Remove and whisk.
  • Continue above steps until desired thickness (don't get too thick, you want it a little less thick than desired since it will continue to thicken as it sits).
  • Add butter and vanilla once it's at desired thickness. You can omit butter to save on calories!
  • Add anything else you want (cinnamon, nutmeg, fresh berries if it's cold, etc).
  • Enjoy!

  2. I really love rice pudding! I didn't want to wait the hour mine has to bake so I googled "microwave rice pudding." This is now my go-to recipe for leftover rice. It's fantastic and easy. I only had 2 cups of rice, so I used 2 1/2 cups of milk. However, 3/4 cup sugar was a little too much, so next time I'll reduce it. I added 1/4 tsp cinnamon on the last whisk. My microwave is 1,000 watts and I microwaved 10 times at 1 1/2 minutes. Perfect. Oh, I used Basmati rice. Thank you for such a great and easy recipe.

  5. Finally found a rice pudding recipe that isn't all milky on top. I made a few changes since I'm pre diabetic. Used Almond Milk but with 2 and 1/2 cups instead of 3 and used 1/2 cup stevia extract. Turned out great. Thank you for this recipe
