A fast, kid-friendly recipe found in the "Mini Page" of the local paper.
- 1 cup quick-cooking rice
- 1 (3 1/8 ounce) package vanilla instant pudding mix
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 3 cups whole milk
- Combine all ingredients, except milk, in a microwave safe casserole. Mix well.
- Add milk. Stir until smooth.
- Microwave on high for 10-12 minutes or until boiling.
- Stir halfway through cooking.
