I really enjoyed this easy-to-make polenta! After the specified 8 minutes of cooking, I whisked the polenta smooth then cooked another minute and it was perfect. As you suggested, I stirred in just a small amount of cream, then added some parmesan cheese and pepper. This made 2 very generous servings that could easily be stretched to 3. Topped with sauteed veggies and really enjoyed - thanks for sharing the recipe! Made for Spring Pick-A-Chef 2013
