Microwave Pecan Toffee

READY IN: 15mins
Recipe by Cook4theFamily

Very easy, every day ingredients and quick. I believe the recipe said you could use pecans or almonds, but there are plenty of almond toffe recipes and besides, I like pecan toffee! I got this recipe from a cookbook, but can't remember the one. I have made this many times for work parties, christmas presents, bake sales and family. Everyone loves it!

This is a very good and very easy recipe. I used the milk chocolate chips and the chocolate (after spreading) did not harden until I put the pan in the refrigerator (and not sure it would stay hard after removing from refrigerator). It might have been the brand I used. Next time I will definitely use the semi sweet chocolate chips to eliminate that. Thank you for a great microwave recipe for quick candy!

Directions

  1. Butter a square 9x9 or 8x8 pan.
  2. Spread pecans in bottom of pan.
  3. Microwave brown sugar and butter in a 1 quart microwavable bowl, uncovered, 5 minutes, stirring every minute.
  4. Immediately pour over pecans, spreading evenly.
  5. Sprinkle with chips.
  6. When melted,(about 1-2 minutes) spread evenly.
  7. For more even cutting, cut lightly into 1-1 1/2 inch squares in the pan while still soft, right after spreading the chocolate.
  8. Refrigerate until hard, cut into squares along marks.
