- 56.69 g butter-flavored cooking spray
- 29.58 ml reduced-fat peanut butter
- 29.58 ml dark brown sugar
- 118.29 ml artificial sweetener (splenda)
- 59.14 ml fat free egg substitute
- 29.57 ml skim milk
- 1.64 ml vanilla extract
- 118.29 ml whole wheat flour
- 1.64 ml baking soda
- 0.61 ml table salt
- 236.59 ml rolled oats
directions
- Cream together the butter, peanut butter, brown sugar and sweetener until light and fluffy. Add eggs, 1 at a time and beat well after each addition. Blend in milk and vanilla. Thoroughly stir together flour, soda and salt; add to the creamed mixture and beat well. Stir in oatmeal. Drop by teaspoon onto waxed paper on microwave oven glass tray. Cook a dozen at a time on full power for 45 to 60 seconds or until firm, but slightly moist. Allow to cool slightly before removing from waxed paper. Repeat with remaining dough.

Well, they look great for the kiddies. Adult tastes might find them a bit too sweet. Additionally, the use of artificial stuff isn't my bailiwick. I like real butter, not cooking spray, and I like real sugar when I use it, not a synthetic like Splenda. Try Stevia instead, and use a lot less. also, use real natural peanut butter, like Smuckers that is made with no sugar. And use about half the brown sugar, same reason .. too sweet! Use a bit of molasses instead.
