Easy and a great treat to add onto your Christmas plates. Prep time includes cooling time.
- 1 cup sugar
- 1⁄2 cup Karo syrup
- 1⁄8 teaspoon salt
- 1 cup peanuts
- 1 teaspoon margarine
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Microwave first 4 ingredients together on high for 8 minutes.
- Add margarine and vanilla, and microwave for an additional 2 minutes.
- Then remove and stir in soda until foamy.
- Pour into greased cookie sheet and then let cool, and break.
Well, I won't be making peanut brittle on the stove anymore! I used to HATE stirring and waiting for that thermometer to reach the right temperature. This is so easy and SO fast! Delicious flavor, it is the same thing I always made, without the work! Thanks a lot Diggy!! I'll make this again at Christmas.
I made this with very good results. I think a tip for some of the people who are having trouble with ruining bowls is to remember that just because a bowl is microwavable, doesn't mean it can withstand the heat from boiling sugar and corn syrup. I used a pyrex type glass bowl and it worked great - no burn and cleaned up with hot water. Also, microwaves come in different watts. If you have an 1100 watt microwave, you don't need to cook it as long as someone who has an 800 watter. You should keep your eye on it, checking every couple of minutes. This is the same recipe my late wife had for years. I can even do it. I recently visited her sister and I took a batch with me. She loved it. DW always liked it because the candy would never stick together as bad as some do. An easy recipe, using everyday ingredients and so quick to throw together. Thanks for posting, Miss Diggy.
