This recipe will serve about 3 people, I most always double all amounts and cook for 11-12 minutes --- give this a try using fresh cooked corn off the cob or well drained canned corn niblets may also be used :)
- 1 small green onion (about 1/4-1/3 cup)
- 473.18 ml frozen corn kernels
- 59.14 ml butter (no subs!)
- 4.92 ml cornstarch
- 4.92 ml sugar (or more to suit taste)
- 1.23 ml dried tarragon
- 2.46 ml seasoning salt (or use 1/2 teaspoon white salt, or to taste)
- fresh ground black pepper (to taste)
- In a 1-1/2-quart microwave-safe casserole dish, combine all ingredients; cover with a lid.
- Microwave on high for 6-7 minutes or until corn is tender and sauce is bubbling, stirring 2 or 3 times.
How on earth do these few, extra ingredients to this corn make it so incredible? I was skeptical about using fennel and infusing this corn w/ a licorice taste, but this recipe is much more sophisticated than 'licorice'. This is quite simply a HUGE surprise to the tastebuds.
I used can corn and am usually not a huge fan of it but this really doctored it up and made it amazing. I was too lazy to chop an onion but it's great even without it! I will be using this often! Thanks Kitten!
