  • 1 medium red potatoes, peeled and cut into 1/2 inch cubes (about 3/4 cup)
  • 2 slices bacon, cut into 1/2 inch pieces
  • 14 cup chopped onion
  • 2 tablespoons all-purpose flour
  • 1 (13 ounce) can evaporated milk (or 1 1/2 cups half and half)
  • 1 (8 1/2 ounce) can cream-style corn
  • 34 teaspoon salt
  • 14 teaspoon pepper

Directions

  1. Place potato, bacon and onion in 2-quart casserole; cover.
  2. Microwave at High 3 1/2 to 5 1/2 minutes, or until potatoes are fork-tender.
  3. Stir in flour.
  4. Mix in remaining ingredients.
  5. Microwave, uncovered, at High 5 to 8 minutes, or until heated and slightly thickened, stirring every 2 minutes during cooking.
