Microwave Chocolate Snack Cake

This is sooo easy and really quite yummmy. It is also nice for small families, because it only makes a small cake. The recipe originally came from Taste of Home and they used a 700 watt oven to test the recipe. Mine is a 900 watt and you just have to adjust the time a bit to accomodate your microwave the first time you make it.

  1. Combine flour, sugar, cocoa powder, salt.
  2. Stir in oil, cold water, vinegar, and vanilla until blended well.
  3. Pour into an UNgreased 8" microwave safe square baking pan.
  4. Microwave on HIGH for about 6-8 minutes, turning the dish every 2 minutes, or until a toothpick tests clean when inserted near the center.
  5. FOR Sauce:In a 1 quart microwave safe bowl, combine sugar, cornstarch, and cocoa powder until combined well.
  6. Stir in water and a dash of salt (if using).
  7. Microwave on HIGH for 2-3 minutes, stirring occasionally, or until the mixture comes to a boil.
  8. Once it hit the boiling point, cook another 1 minute more.
  9. Stir in butter and vanilla and mix well.
  10. Slice cake into squares and serve the warm sauce over the still warm cake.
  11. I like to add some sprinkles, shredded coconut,or chopped nuts on top too.

My in-laws gave me a microwave to replace mine that had konked out and I used this recipe to make a 'thank you' cake (since it was made in my present!). ;) My kids (ages 8 & 9) actually did most of the work, which shows how easy it is. All of the chocoholics in the family loved it. Super easy and fast! I baked it for 5 1/2 minutes in the 1100 Watt microwave, in case that's helpful to anyone!

I really enjoyed this cake- but was not crazy about the topping. I had some Pillsbury chocolate fudge frosting the pantry. Wow- this cake with that frosting is soooooo good! Thanks!

Wow this was really good for less than ten minutes of work. I swear I could've eaten the cake batter pre-cooked (I'm odd, I love the combination of the baking soda, vinegar and chocolate). I only "baked" mine for 5 minutes in a 1250W microwave. Came out very moist and chocolatey. Thanks!
