We had this at a recent art opening.They were on a platter, thin, golden brown, and garnished with two long sprigs of lavender. Michael duplicated it at home. Yummy!

  1. Slice zucchini into thin rounds, sprinkle with salt, and set aside to sweat.
  2. Dredge with corn meal.
  3. Sauté in oil on medium high heat.
  4. Drain and allow to cool just slightly.
  5. Serve.

These were delicious and so easy to prepare. I will make this dish often. Thanks for the recipe. Plus, I think I am going to try the yellow squash and see how those turn out.
