I have made this cake time and time again and I have perfected it. I double the ingredients to make the frosting and I mix the flower and baking soda in a different bowl, then I take spoon fulls in the sifter one at a time, and through each sift I mix it in.
It's delicious and moist and I was told it's called wedding cake cause the ingredients have "2" of everything - get it not, single but a couple??
This is my favorite cake! Love it!
hello
I have been making this cake for years, - so much so that it's almost my signature dish.
I usually put lemon juice in the icing to cut the sweetness, and use unsweetened pineapple (crushed ) a 600g tin seems to be heaps.
We have always known it as Mexican wedding cake recipe too.
cheers
Lorraine
Lorri14nz
Awesome cake recipe. So moist and delicious. My family has been making this cake for years...we LOVE it!!
This is an awesome recipe. It was so easy to make and everyone loved it. This is one of my most favorite recipes yet.
I absolutely love this recipe, my aunt made this cake too, and it is so delicous, every time I make this, there is no leftovers!!!
This was good but just did not hit the spot with me. Followed the recipe and looked up Mexican Wedding Cake and this is like others I found. Maybe it just didn't suit my tastes and it was just me. Served at a Cinco De Mayo party-friends enjoyed. Nice recipe-just don't love it
