Tomatillos are really great, you can do so much with them. This is a marvellous, tart salsa.
- 8 ounces fresh tomatoes, finely diced
- 8 ounces fresh tomatillos, husked. rinsed & chopped
- 1⁄4 cup red peppers or 1⁄4 cup yellow pepper, chopped
- 2 tablespoons red onions, minced
- 1 teaspoon grated lime peel
- 1 tablespoon lime juice
- Mix all the ingredients in a non metallic bowl.
- Cover and refrigerate for up to 4 hours.
