  • Mix all ingredients except rice, corn and toppings in large saucepan. Bring to a boil; reduce heat and simmer two minutes. Stir in rice. Cover and remove from heat. Let stand for 5 minutes. Add corn, mix thoroughly.
  • Top with grated cheese and tortilla chips.
  • Note: Can add a can of black beans drained or small can of chopped ortega chilis.
